Christmas Cakes

These two lovely Christmas cakes were thoughtful gifts from two families for whom we had done small kindnesses this year.  On the left is the traditional Belizean Black Cake made with dried fruit.  The rich black color is from deeply caramelized sugar.  Wonderfully dense and moist.  The one on the right is a simple yellow cake, sweet, light, and delicious.  Sweeter yet to be remembered.

  1. The traditional Belizean Black Cake sounds especially appealing, but I would be willing to try either one!

    1. You look at that black cake and think chocolate! But your mouth tells you otherwise.

  2. How great, gifts made for you, and consumables, so you don't have to dust them! I'd seize that black cake the moment you looked away.

    1. The best sort of gifts to receive! That Black Cake is a beauty, isn't it?
You spiked my curiosity in your comment about the crank phones yesterday, so I added some info in a comment.

  3. Kindness is a wonderful thing. Jerry makes a Jamaican Black Cake from a recipe he found in the New York Times. I’m dreaming of it now.

    1. Sometimes kindness is catching, even if it doesn't spread as quickly as covid! I'll have to check out that recipe and see how it compares.

  4. I've had a Jamaican black cake and I imagine it is very similar to the Belizean one. I plan on making one next year!

    1. Good plan, Mary! I'm going to look at that NYT recipe that Mitchell mentioned and see how it compares.
