Still only 24 hrs a day in paradise!

So much has been going on, but I want to do it justice.  So today will be only a short post with some lengthier posts coming up later this week.

The photo below is my office.  Max has been helping me work.  In the photo below, I grabbed my camera about 3 seconds too late to show the little warbler that Max was watching as it snatched insects off the screen.  You can see the hardship I am enduring with substandard office space.  ;-)  The little white stick on the computer is the dongle that pulls in mobile phone signal that I use for internet access.  Not as slow as dial-up of the old days (I don't think I could endure that), but slower than what I am used to.  The view makes up for a lot, though.

 

For our Puerto Rican friends who have given us recipes for plantains, I am including a photo of how we used mofungo leftovers.  (The actual account of making the mofungo requires a longer blog post that will come out this weekend.)  Anyway, we had some leftovers and Dennis made these delicious stuffed peppers.  Inside one was brie cheese, inside another was brie with breadcrumbs, and inside the third (and best) was leftover mofungo and brie!  It was fabulous!  The peppers were a little hot, but not as hot as serano or jalepeno peppers, just enough to get your attention.

  2. It's good to see that you are managing to get round the problems of being out in the sticks. The internet is always a big one - we have a connection of half a meg, just better than dial up!
